1cup vegetable oil (or sunflower oil or mix) | |
Salt and white pepper | |
tbsp lemon juice ( or white wine vinegar) |

Add 1cup oil : 1tsp at a time, whisking continuously
( more quickly as thickens-about 3 minutes)
Add 1 tbsp lemon juice
Add salt & white pepper.In a food processor:
2 egg yolks&1 tsp Dijon mustard :10 seconds—creamy
with the motor running :
Add 1cup oil : in a slow thin stream
add 1 tbsp lemon juice
