用料  

2 egg yolks
1 heaped tsp Dijon mustard
1cup vegetable oil (or sunflower oil or mix)
Salt and white pepper
tbsp lemon juice ( or white wine vinegar)

Mayonnaise的做法  

  1. whisk together:  
    2 egg yolks &1 tsp Dijon mustard: for 30 seconds—creamy

    Add 1cup oil : 1tsp at a time, whisking continuously
    ( more quickly as thickens-about 3 minutes)

    Add 1 tbsp lemon juice
    Add salt & white pepper.

  2. In a food processor:
    2 egg yolks&1 tsp Dijon mustard :10 seconds—creamy

    with the motor running :
    Add 1cup oil : in a slow thin stream

    add 1 tbsp lemon juice
    Add salt& white pepper:
    quick whisk
