1. Courgettes&eggplant:halved
   tomato &capsicum: quartered
   red onion&fennel:chunks
   
   Preheat the oven to 200c.

2. Heat oil in a roasting tin
   Add the veges&herbs&season
   toss well
   Oven 200c for 30 minutes
   turn halfway
